In the Kitchen with Cate: Adventures In Taco Land

My family and I have been doing Taco Wednesday's and I am just loving it. Tacos are so easy to make, they don't take much time at all and you can make them in a variety of different ways. I thought I would show you how I make them this week. Now I make tacos a very non traditional way and I love it!





Firstly, I use a bunch of vegetables and I experiment with whatever I have at home. Today I used Green and Red Bell Peppers as well as Onions and I cook them up for a bit. 



I add some butter to the mix half way through so that the onions with caramelize.




I then add the chicken. Now normally I use chicken, sometimes I use ground turkey as well. If you prefer red meat you can do beef or pork as well. The great thing about this is you can use whatever meat you like and you can make it as healthy as you want to. 
*Side note: My brother is a vegetarian so you can use vegetarian meat as well. 




You want to cook the chicken and use your wooden spoon to break the apart the chunks. 




Instead of the seasoning and sauces that come with the taco making package, I use Salsa and Ketchup. 




I just use Old El Paso taco kit for my tacos. I love the flat bottoms which are super easy for pouring and the wide top helps as well. Now I like my taco shells hard (Insert joke here) but you can also get the fajita type softer wraps as well. 




Now this is how my taco mix looks after it is all done. It really is great and much better and healthier I feel than just plain taco meat in a shell. It helps you get towards your daily vegetable content. I feel like you should always have some sort of vegetables with your lunch and dinner and this really helps. 




This is the finished product. You can top up your tacos with anything you like. Lettuce is a good option (especially if your taco meat has no veggies) but I just like some sour cream and some Tex Mex cheese.
